The preview for the November 23 CVS ad is out, and there's a deal to buy 3 Amex gift cards and receive $10 ECBs and a $15 gas card by mail-in-rebate. Amex gift cards have an activation fee, so the deal is not pure profit. But according to this SlickDeals thread, the activation fee on a $25 gift card is $3.95, so after fees and postage for the rebate, you'd still end up with a profit of $12.73. That's a pretty good deal, especially since these cards can be used at almost any store that accepts American Express. You can use them yourself, or give them as gifts - they're especially good when a gift card is appropriate but you're not sure what store the recipient would want to shop at.
If you read further into the SlickDeals thread, you'll see that higher value gift cards have higher activation fees, and "branded" $25 gift cards have an activation fee of $4.95. So for maximum profit, you'll want to make sure that you buy "generic" $25 gift cards.
